WHEAT BELLY FLAX WRAP RECIPE (one version) www.getoiling.com/essentialcomfortsmama/blog INGREDIENTS 3 Tablespoons ground flax (GOLDEN is best cuz it isn't ugly, haha) 1/4 teaspoon baking powder several dashes of pink salt to your taste couple dashes of sugar free seasoning such as Cajun spices or garlic granules, etc. 1 Tablespoon coconut oil 1 Tablespoon water (hot if your coconut oil is solid) 1 egg *Spray a microwavable plate or pie pan, set aside. *Whisk the dry ingredients together first, then whisk in the other ingredients til it is a smooth consistency (try to be quick cuz flax can get thick). *Scrape into your chosen plate. *Wiggle it to form a circle (TIP...spin your plate a few times! It will make a nice round splat that makes a great wrap shape. I spin mine on the floor, haha). *Microwave it for about 3 min. Let it cool for a couple min then carefully work it loose with a spatula and use it how you want. If you use it as soon as it cools, it will be softer. Avoid drippy wet fillings though! USES FOR THIS WRAP Well it's pretty obvious you can use these like a tortilla or any wrap. Tacos, fajitas, tuna/cheese/lettuce, etc. I've also cut it into fourths to use as a sandwich bread which is very handy. :) So far, my FAVORITE way is to cut it in half and fry it like a grilled sandwich but I kick it up a notch and fry cheddar cheese onto it so it has a CRUNCH :) STEP 1 Cut in half. The part that was touching the plate is more bubbly/rough looking. It's the side you will use for frying! STEP 2 *Get your greased frying pan hot on medium heat and ready to go. *Lay one piece of wrap down on the bubbly side and put your chosen fillings onto it (don't forget the cheese which helps glue it shut, haha). This filling could be anything..ham, spinach, and Swiss.. mozzarella, olives & pepperoni.. leftover pork chop w mushrooms & tomatoes.. BURGER melt w bacon & Swiss.. sausage & kraut w a smear of SF BBQ sauce Tomato slices w tuna salad ...whatever! *Lay the other half of the wrap on it with the rough side pointing out. *After it looks grilled on the bottom, gently flip it over and grate some cheddar cheese on it. *After the other side is toasted, flip it back to the first side to fry the cheese into it! This might take a minute. *Grate cheese onto the second side. *Once the cheese has fried on the first side (takes about a minute..don't let it burn), flip it over and fry the cheese onto the second side. *Scrape it all up, put it on your plate, and after it cools for a minute carefully cut it into wedges (the cheese should get crunchy after it cools slightly..if you fried it long enough.) Enjoy with a side of olives, celery & cream cheese, etc. Dip it in whatever suits your fancy...wheat belly yogurt, sour cream w/mayo, guacamole, etc. Try it with pizza toppings! :) REMEMBER TO ALWAYS DRINK A LOT OF WATER WHEN EATING FLAX, HAHA!
